Wine Pairing with Carnitas
FAST, EASY & QUIET

Let’s talk about the recipe and how to cook it. 

Quick Cooker Carnitas and Wine Pairing with Carnitas

  • 2 lbs. or 1kg of trimmed boneless pork tenderloins  
  •  Chili powder 1 tbsp (15 mL) 
  • Salt 2 tsp (10 mL) 
  • ground cumin 1 tsp (5 mL)
  • 1 large red bell pepper
  • 1 large onion
  • 4 garlic cloves
  • 1 lime (plus additional for garnish)
  • One tbsp (15 mL) canola oil
  • 1 tsp (5 mL) ground cumin
  • You can also combine it with Flour tortillas, corn, taco shelf, Greek yogurt, salsa, or sour cream 

Follow these directions

  1. Cut the Pork loin into 1″ (2.5-cm) pieces. Combine the salt and chili powder.
  2. Add in small bowl cumin and sprinkle the spice mixture over the pork on step 1. 
  3. Turn on and start warming up the Quick Cooker 
  4. Heat the oil in the pot for 3 minutes.
  5.  Add the pork and cook uncovered for 3–5 minutes, stirring occasionally.* Press CANCEL.
  6. Clean the and cut the bell pepper you choose. I recommend red or yellow.
  7.  Slice the onions and the bell pepper. 
  8. Add the bell pepper and onion. Ensure you pressed the garlic with the Garlic Press, and juice from the lime squeezed to the Quick Cooker.
  9. Lock the lid and select the BEEF/PORK setting. Adjust the time to 8 minutes and press START.
  10. When the timer is up, press CANCEL. Press the steam-release button to release the pressure manually.
  11. Remove the pork and vegetables and reserve ¼ cup (50 mL) of the liquid. Shred the pork and toss with the reserved juice. Serve on tortillas, rice, or others with your favorite toppings.
  12. Serve at least eight people.

Cook’s Tips:

To trim a pork tenderloin in small or long slices.

Instead of the pork tenderloin, you can use pork shoulder just cut into 2″ or 5cm cubes. 

Safety Tip: The stainless steel inner pot will be hot during and after cooking. Use a long-handled utensil when stirring and removing Food.

Wine to Pair Red or Green Dish

 Two categories of use in Mexican Food ingredients are Red and Green. 

Examples: Cumin, tomatoes, chili pepper, and coriander would contribute to Red dishes. These flavors need more of a more Bold and flavorful wine, like a juicy red or slightly dry rosé to balance them out. Like  Cabernet Sauvignon, Pinot Noir, Merlot, and others 

Lime, and cilantro, jalapenos are part of a green dish. And, since these flavors are more light and refreshing, they work better with light and acidic white wine. A great wine that can be perfect to pair is the Sauvignon Blanc, or Chardonnay wines are excellent choices.
