One of my favorite dishes is Mofongo with octopus or shrimps. But the Mofongo is not considered an official cuisine staple in Puerto Rico.

We start the festivities on Thanksgiving. Then Christmas, New year, Wiseman, and the “Octavitas.” It ends on January 14, 8 days after the Epiphany!! So if you do not know what to do or where to go after New Years, go to San Juan, PR. It is warm; you can go to the beach and enjoy the fun!!

- Rice is part of our everyday diet. My mom cooks Rice and Beans every day. My mom cook spaghetti for the girls. But for the men in the family must eat Rice & beans. When my brother comes to visit me, I cook Rice every day!!
- Roasted Pork is a tradition too. We have people that do that for leaving. They go to your house and Roasted the Pork on your back yard all night. The Roasted Shoulder Pork can be cook in the oven or slow cooker. Here some tips
How long does it take to cook a pork shoulder in the oven?
Preheat the oven to 350 and cook roast for 2 hours at 350 and 3 and 1/2 hours at 325 degrees F. Roast the pork for 35 minutes per pound, uncovered, until the skin is crispy brown. - I LOVE PASTELES!!!! Pasteles. A real, local specialty, pasteles resemble tamales. And are traditionally made with green banana masa stuffed with stewed pork meat. We have different pasteles made with Yam and the add other meats; I admired the Puerto Ricans that make pasteles. It is not easy. You most like to do it. My cousin and other family members have a lot of fun doing it. They made them I eat them lol!!

- Christmas time, you most finish having a Puerto Rican Rice Pudding o Arroz con Dulce.
- Our only and unique traditional drink name Coquito or Little Coconut. It is a Christmas alcoholic drink similar to eggnog. I also called Puerto Rican Eggnog. It is easy to make you just nee Puerto Rican rum, coconut milk, and cream plus some sweetened condensed milk. You can add cinnamon, vanilla or cloves to help with flavor. Puerto Rican Arroz con Gandules o Rice and Pigeon Peas Recipe
Heat oil in a large pot over medium heat.
cook until the bacon just beginning to crisp.
Mix in the Recaito and let cook for a minute.
Combine the peas, tomato paste, olives, oregano, a piece of garlic if you want
I recommend the medium size of rice.
Mix the rice in the water, season with adobo and bring to a boil.
Stir in the rice and bring the water to a boil again.
Lower the heat, and cover the pot.
Cook on low for about 30 to 40 minutes, stirring occasionally, until the rice is tender.
Transfer the Puerto Rican rice and pigeon peas to a serving dish or spoon onto individual plates and serve.
